HOW TO BAKE A BANANA BREAD

INGREDIENTS: 190 gram sugar, 3 ml vanilla essence, 4 ripe bananas, 1.5 ml salt, 1.5 ml bicarbonate of soda, 125 gram margarine or butter, 2 eggs, 240 gram flour, 10 ml baking powder,125 ml milk.

METHOD: Stir margarine and sugar together with a wooden spoon, add eggs, one at a time and mix well. Add vanilla essence.

Mash the bananas well and stir them into the mixture.

Sift 1/2 of the flour,salt,baking powder and bicarbonate of soda, and also 1/2 of the milk to the mixture and beat well with wooden spoon. Then add the rest of the flour etc, and milk and mix well.

Pour into a prepared, greased 24 x11 cm loaf tin and bake at 170 degrees Celcius for about 45 minutes. Could be less; check with fork.

This recipe is fail-safe.

HOW TO BAKE SMOKED SNOEK CASSEROLE

INGREDIENTS: 450 gram filleted Smoked Snoek, 1 tin Cream of Celery Soup, 1 cup cooked Peas, 125 ml Milk, 30 gram Butter, 15 gram grated Onion, 135 gram Breadcrumbs, 1 cup cooked Spaghetti, Pinch Pepper.

METHOD: Mix the snoek with the peas, onion, spaghetti and pepper. Add the milk to the celery soup and stir into the fish mixture. Place into a greased casserole dish. Sprinkle with butter and breadcrumbs(butter on top). Put into oven and bake at 200 degrees Celcius for 20-30minutes until golden brown.

HOW TO MAKE A CORNED BEEF TART

INGREDIENTS: 1 tin (300 gram) Corned Beef, 250 ml soft Bread crumbs, 1 Tomato(skin removed in boiling water) chopped, 1 Onion (chopped), 250 ml Milk, 2 Eggs, 1 ml Salt, 2 ml Mustard powder, pinch Pepper, 120 gram( or 250ml=1 cup) grated cheddar Cheese.

METHOD: Preheat oven to 190 degrees Celcius( 375 degrees Fahrenheit). Grease a 1,3 litre ovenproof dish with margarine.

Mash corned beef, add bread crumbs, tomato and onion and mix well.

Beat eggs, milk and seasonings together, and add to corned beef mixture . Mix well.

Spoon mixture into a greased dish, and sprinkle grated cheese on top.

Bake for 30-40 minutes or until crust has browned and the liquid has set.

SERVES 6-8 PEOPLE

HOW TO MAKE SAVOURY ONION QUICHE

INGREDIENTS: About 200 gram shortcrust\ puff pastry, 675 gram sliced white onions, 125 gram butter, 3 beaten eggs, 2/3 cup ideal milk, salt and pepper.

METHOD: Line 22cm pie plate with pastry. Cover onions with cold water and bring slowly to boil. Remove immediately and drain well. Mix 1 cup cheese with onion mixture. Melt butter, when hot, add onions and cook slowly until golden. Remove from heat. Beat eggs and ideal milk. Add to onions. Season with salt and pepper. Pour into pie crust. Bake 30-35 minutes at 220 degrees Celcius.

HOW TO MAKE LAMB HOTPOT.

INGREDIENTS: 2 Table spoons Oil, 1 kilogram Neck of Lamb or Knuckles, 2 Table spoons Seasoned Flour, 4 Onions peeled and sliced, 2 sticks Celery (sliced), Carrots( peeled), 1 Leek(washed and sliced), 450 grams Sliced Potatoes, 300 ml Stock, 1 teaspoon Worcester Sauce, 15 grams Margarine, 1 teaspoon Rosemary.

METHOD: Heat oil in pan. Coat lamb in seasoned flour and brown in oil. Add onions and celery and reduce the heat for 5 minutes. Layer the lamb in casserole dish with onion mixture, carrots and leek, finishing with the potatoes. Pour in the stock, worcester sauce and rosemary, dot with butter, cover and cook for 1 1/2 hours at 350 degrees Fahrenheit(180 degrees Celcius). Remove lid for remaining 45 minutes of cooking time.

MAKING SPANISH BAKED FISH

INGREDIENTS: 500 gram Hake, 2 Tomatoes, 15 ml Lemon Juice, 10 ml Salt, Pinch of Pepper, 1 Onion, 15 gram Butter.

METHOD: Mix Salt and Pepper with Lemon Juice. Butter or grease a baking dish. Place fish into this and pour Lemon mixture over it. Let it stand for 10 minutes. Meanwhile chop Onion and Tomatoes finely(small). Place the Onions on the Fish and the Tomatoes on top of this. Sprinkle the left-over Butter over the tomatoes.

Place dish in medium oven ( 190 degrees Celcius) and bake fish for 25 minutes.

Serve with mashed potatoes.

HOW TO MAKE A BAKED CHEESECAKE.

PASTRY: 125 gram Butter, 375 ml Cake Flour, 3 ml Baking Powder, 1 Egg, 60 ml Sugar.

Cream margarine and sugar. Add egg and beat well. Sift in dry ingredients. Mix to firm stiff dough. Press into buttered ovenproof dish.

FILLING: 500 gram smooth Cream cheese, 5 ml vanilla essence, 125 ml Cream, 15 ml Lemon Juice, 3 Eggs, 5 ml Lemon Rind, 200 ml Sugar.

Beat all the ingredients together (Runny mixture). Pour into a pastry shell and bake at 180 degrees Celcius for about 25 minutes. Pastry must be golden colour. Remove when cold and serve when cold.

HOW TO MAKE GOOSEBERRY DELIGHT

INGREDIENTS: 1 Swiss Roll, 250 gram smooth Cottage Cheese, 2 teaspoons Custard Powder, 1 tin gooseberries, 1 tin Condensed Milk, a little sugar, 75 ml Lemon Juice, 125 ml whipped cream.


METHOD: Line pie-dish with sliced Swiss roll. Beat together condensed milk and cottage cheeese. Add lemon juice and beat till it thickens. Fold in 125 ml whipped cream and pour over Swiss roll. Drain gooseberries and reserve liquid. Reserve a few gooseberries for garnish. Arrange gooseberries on cake mixture. Bring Syrup to boil and add sugar to taste. Mix custard powder with a little water and add to syrup. Cook till mixture thickens. Spoon over gooseberries and refrigerate overnight.

MAKING SALLY'S ALMOND PAVLOVA

INGREDIENTS: 4 egg whites, 3/4 cup Castor sugar, 1 Table spoon brown sugar, 1 Tablespoon cinnamon, 1/2 cup flaked almonds, 250 ml cream, 2 Tablespoons icing sugar, 1/4 Tablespoon vanilla essence(or liqueur)

METHOD: Beat egg whites stiff. Fold in castor sugar. Line a swiss roll tin with greased tin foil. Spread egg white mixture onto foil. Sprinkle brown sugar, cinnamon and flaked almonds over mixture. Bake at 180 degrees Celcius for 10 minutes, then turn out onto second tin foil. Beat cream, icing sugar and vanilla together. Spread over meringue and roll up. Freeze overnight. Remove from freezer 45 minutes before service. Slice and serve.

HOW TO BAKE A SUNDAY NIGHT SUPPER DISH

INGREDIENTS: 1 tin Sweet corn, 1 Tablespoon flour, 2 Eggs, 2 or 3 small pieces Bacon, Salt and Pepper, 1 Table spoon Butter, 1/4 to 1/2 cup Milk, Cooked green Peas, Few slices Tomatoe.

METHOD: Put sweetcorn into basin, add flour, milk and melted butter. Stir in cooked peas left over from previous meal, a few slices of tomato and small pieces of bacon. Add the beaten egg yolks and season to taste. Whip the egg whites stiffly and fold into mixture. Put into a casserole or oven dish and bake in moderate oven at 375 degrees Fahrenheit for about 30 minutes. Served with chicken, this dish is delicious.
