HOW TO MAKE A FROZEN MOCHA DESSERT

First of all the ingredients: 2 cups evaporated milk-well cooled,2 packets dark chocolate instant pudding,1 teaspoon instant coffee made up with 1 teaspoon boiling water,2 cups artificial cream(whipped),3 teaspoons sweet sherry, 1/8 teaspoon salt, 2 cups Tennis biscuits roughly broken into pieces.

METHOD: Add the instant pudding and prepared coffee to the milk and beat to a smooth texture.Stir in the prepared cream,sherry and salt,followed by the Tennis biscuits. Line a small pan of 23 cm by 12,5cm by 2,5cm with aluminium foil, shiny side to the inside. Pour mixture into pan and freeze until firm, preferably overnight.Unmould. Pipe the cream around the edges and on the top and sprinkle chopped nuts over the cream. This dessert must no be frozen for more than 24 hours.
FOR DECORATING:Whipped cream and chopped nuts.

HOW TO MAKE A COLD SAGO PUDDING

First of all the ingredients: 1 packet sago(500 gram), 2tins Ideal milk(large), 3 packets red jelly, 2 cups of sugar,1/2 teaspoon salt, 1/4 teaspoon tartaric acid, 10 cups cold water.

Method;
Soak sago for a few hours in the water then boil sago slowly in water, sugar,salt and tartaric acid over a low heat until transluscent(about 20 minutes). Mix jelly with 1 cup boiling water for each packet. Mix with sago. Leave to cool completely. Beat the Ideal Milk until firm and fold into the cold sago mixture. Place in refrigerator.
